About Our Pho

Pho is the cornerstone of Vietnamese cuisine, and at Viva Restaurant we have perfected it over more than three decades. Our rich, complex bone broth is the result of hours of slow simmering with aromatic spices — star anise, cinnamon, cloves, and ginger — drawing deep, layered flavour from beef bones. The herbs, spices, and pastes used in our pho are sourced directly from Vietnam several times a year to ensure the most authentic taste.

Each bowl is served with silky rice noodles and your choice of protein — rare beef (tai), flank steak (nam), tripe (sach), or a combination. A side plate of fresh bean sprouts, Thai basil, lime wedges, and jalapeno slices lets you customize every bowl. Available in beef, satay, and other flavour variations, Viva's pho is lighter and less oily than most — hallmarks of authentic Vietnamese cooking.
